Gooey Blueberry Muffins

These little muffins are perfect for breakfast. They are gooey & delicious & do they not look adorable? They turned out amazing! We had them for breakfast this morning & I had to share :)

Ingredients for jam:
1 cup blueberry
1 tsp sugar

Ingredients for muffins:
2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 1/2 tsp salt
1 cup blueberries
1 1/2 cup sugar
2 eggs
1/2 stick unsalted butter, melted
1/4 cup canola oil
1 cup buttermilk
2 tsp vanilla extract

Ingredients for topping:
1/2 cup sugar

Directions:
1. Preheat oven to 425
2. Heat 1 cup of blueberries in sauce pan
3. Mash the blueberries & add 1 tsp of sugar
4. Cook under low heat until it thickens into a jam like texture, about ten minutes. After set aside & let it cool down.
5. In a large bowl whisk together the flour, salt & baking powder. After that is mixed add the 1 1/2 cups sugar, melted butter, eggs, oil, & buttermilk. Whisk all together until well combined. 
6. Pour in blueberries after all is combined & swirl in the blueberry sauce. (I actually doubled my sauce instead of using the actual blueberries because I liked the sauce better.) Mix with the spatula until batter comes together. Lumpy is ok if you added the blueberries instead of the double sauce. 
7. Scoop batter into the tin muffin cups. Make sure not to over fill them because they will rise as they cook.
8. Sprinkle the 1/2 sugar onto each muffin batter until gone.
9. Bake for 13-20 minutes until tops are brown or you can stick a toothpick in & it come out clean.
